We had another great evening in the kitchen with the Edible Garden Girl, Hilary Schwab. We learned about the various kinds of high fiber, low calorie, nutrient rich eggplant. Hilary prepared a baba ganoush appetizer, and a main dish of grilled eggplant with vegan pesto sauce. The recipes were simple and looked delicious.
